Our mainstay remains
smoked seafood, produced daily to the exacting specifications of the customer in our smokehouse located on the banks of the
Chesapeake Bay in
Kent Island, Maryland. We purchase only the freshest seafood available from local sources, focusing on the regional catch we are inherently expert at and most proud of exhibiting, such as succulent smoked striped bass—affectionately known in these parts as
Rockfish—and our popular shellfish assortment of
tender scallops,
rich jumbo
oysters, and
savory mussels marinated in our secret family cure and smoked to delicate perfection.
In showcasing our regional seafood expertise, we at times inadvertently mute our equally sumptuous time-honored offerings, including
hot and
cold smoked salmon (
kippered and
lox),
whitefish,
mackerel,
finnan haddie,
eel,
sablefish, and
sturgeon for our more traditional patrons.
Innovation
At the same time, we never shy away from
innovation, continually experimenting with
new cures, woods, and seasonings to discover the next great taste, a recent example being lemongrass infused flounder, highlighted in our
Smoked Seafood of the Month club—as we say, “
beef or chicken or pork remains just that in all its forms, no matter the fancy dressing. But a luxurious smoked swordfish steak is worlds apart in taste and texture from a tender smoked trout fillet, a rich smoked mackerel side, or a platter of plump, golden smoked scallops.”
All Natural
Cochrane Seafood prides itself on evolving to meet the American consumer’s increasingly sophisticated palate, with an emphasis on the growing awareness of
natural and
healthy options. Cochrane Seafood assures its smoked selections will
never be packaged in faux gold foil “
flexible tuna can” retort packs in which a fish fillet is packed with chemical liquid smoke and cooked, resulting in a “
smoke-flavored” boiled fillet with artificially unlimited shelf-life. We use
NO artificial preservatives or coloring in our smoked seafood,
nor do we
brine inject or employ chemical liquid smoke to shorten the smoking process and prevent the natural weight loss incurred over a 4 to 24 hour smoke cycle.
