Product Description

One of our most popular products, mildly sweet scallops are smoked to a plump and moist golden perfection, in your choice of Cochrane au Naturale base marinade or our special Wine Garlic recipe. Always a hit at parties, it works equally well as a topping to your favorite pasta or salad dishes.


Thai Smoked Scallop Salad
Ingredients:
* 1 serving Cochrane Smoked Scallops
* 4 small bok choi
* 1 lime, segmented
* 4 figs, quartered
* 1 small bunch fresh coriander, leaves only
* 1 small bunch fresh mint, leaves only
* lime chili dressing (see below)

Lime Chili Dressing:
* 3 tablespoons sugar
* 1 lime, juiced
* 1 small red chili, finely chopped
* 1 small green chili, finely chopped
* 1 golden shallot, finely chopped
* 1 clove garlic, finely chopped
* 4 tablespoons olive oil

Directions:
Blanch bok choi in boiling salted water for 20 seconds, drain well. Drizzle with olive oil and quickly grill or stir fry for one minute.

To present, toss Smoked Scallops with grilled bok choi, lime segments, figs, and fresh herbs. Dress generously with lime chili dressing. Serve immediately.

Lime Chili Dressing:
Cook sugar over medium high heat until golden. Carefully squeeze in lime juice. Add chilis, shallot, and garlic. Simmer gently for two minutes. Swirl in olive oil and remove from heat.
