Our Smoked Striped Bass is mild, with a delicate, slightly sweet flavor that appeals to all palates. It is moderately firm, but flakey, with just enough natural oil content to keep it tender and moist throughout the smoking process. We offer it in its natural form, or seasoned with our Cochrane Red Spice or Lemon Pepper blend.
Smoked Striped Bass With Mustard Vinaigrette
Ingredients:
* 1 Cochrane Smoked Striped Bass fillet
* 1 tablespoon dijon mustard
* 1 tablespoon balsamic vinegar
* 1 clove roasted garlic, minced
* 1/2 zest of lime
* 1 tablespoon extra virgin olive oil
* 1/2 bunch arugula, stemmed and washed
* 1/4 cup chopped tomato
* salt and pepper to taste
Directions:
Add dijon mustard, vinegar, garlic, and lime zest to a blender and puree. With the blender still running, slowly add oil until emulsified. Season with salt and pepper to taste. Spread arugula on a platter and place Smoked Striped Bass atop. Drizzle with blended dressing, garnish with tomato, and serve.
