Few freshwater fish seem so perfectly suited to smoking as trout does. Its delicate, nut-like flavor intensifies as it renders during the smoking process. Smoked Trout Rillettes
Ingredients:
* 1 fillet Cochrane Smoked Trout
* 6-7 tablespoons crème fraîche
* 3 tablespoons fresh chives, chopped
* black pepper, freshly ground
* 1 baguette, sliced and toasted
Directions:
With a fork, break Smoked Trout into smaller portions. Add crème fraîche and mix with two forks, shredding rather than mashing the Smoked Trout. Add chives, and pepper to taste. Spread on sliced toasted baguette and enjoy.
